While in Chihuahua I had Tacos El Pastor, which was really good. So the other night I made something with some ideas I got from that dish. The only real carry over is the size of the taco, the pineapple, and the parsley.
  • 1/2 Lb beef meat cut into 1/4" thick slices.
  • Pineapple
  • Thousand island dressing
  • Hot sauce - I got mine in Mexico
  • dried Parsley flakes
  • Tortillas

NOTE:I brined the meat overnight in a brine consisting of salt, garlic powder, ground pepper, and sugar.

Cook the meat and then cut the meat into smaller pieces (about 1/4" to 1/2" pieces). Places them on a tortilla, and add some pieces of pineapple (sliced 1/8" thick at most), add some thousand island dressing, and hot sauce to taste. Sprinkle with the Parsley to make it look pretty.
